Faux Food: Poop Rice/Cranberry Apple Wild Rice Salad

What in the hell is, "Poop Rice," chile?  I know you all are saying it, but seriously this sh!t is goooooooood.  Technically it is called Cranberry Apple Wild Rice Salad.  I discovered it at a lovely little bistro in my hometown of Hot Springs, Arkansas and hunties... PREACH!  Oh you know I will.

This rice is delicious.  But why poop rice?  Here is the kicker.  It is actually is good for you and chock full of fiber.  There is no artificial sugars.  As a matter of fact... everything that goes in this salad is all natural.

You heard me.  Even more so, everyone who tries this salad has instantly loved it and asked Ms. Faux for the recipe.  It is THAT good.  So here you go hunties.  I present to you... POOP RICE.

CRANBERRY APPLE WILD RICE SALAD

Makes 8 to 10 Servings

Tools: 4 Quart Saucepan, Large Bowl, Colander, Medium Bowl & Whisk

Salad:

3 Cups Wild Rice
1 Cup Basmati Rice
2 Gala Apples, diced
1/2 cup pecan halves, toasted
1/2 cup dried cranberries
1/4 cup golden raisins
1/2 cup Italian parsley leaves, chopped
1/4 cup red onion, diced small
1/4 cup celery, diced small

Dressing
1/4 cup balsamic vinegar
1/8 cup raspberry vinegar
1/4 teaspoon fresh ground pepper
2 teaspoon kosher salt or to taste
1/3 cup olive oil

Throw all salad ingredients in a bowl.  (Make sure rice has cooled)  Mix together.

Whisk all ingredients of the dressing together and pour over salad and mix.

Eat.  Wait a little bit.... and you will understand Poop Rice.

O.k. I know you don't want to hear about the poop anymore while I'm talking about food, but seriously it is so healthy and full of fiber.  Do your tastebuds and digestive track a favor.
