Faux Food: Ms. Jill's Vegetarian Buffalo "Chicken" Dip


Buffalo Chicken Dip... but vegetarian?  Surely I am kidding.  No mam I am not.  For the last couple of years Ms. Faux's good friend Ms. Jill has brought this delicious vegetarian recipe to her favorite things party.

The thing about this recipe... Vegetarians and meat eaters alike love it.  While it is delicious with baguette slices or tortilla chips, I admit this dip is best to Ms. Faux with the healthy option of celery rigs.  Delish.  You can use any Buffalo Wing Sauce but Ms. Faux and I believe Ms. Jill prefer Frank's Red Hot.



Vegetarian Buffalo "Chicken" Dip
 
Ingredients:
1 package (8 ounces) cream cheese, softened
1 can (13-15 ounces) cannellini beans or Great Northern beans, drained and rinsed
1/2 cup buffalo wing sauce
1 1/2 cups shredded Colby-Monterey Jack cheese (see note)
1/2 cup blue cheese salad dressing (optional)
French bread baguette slices, celery ribs or tortilla chips for dipping
 
Preheat oven to 350°. In a bowl, mash white beans with a fork or potato masher until all (or most) are broken down. Add cream cheese and mash beans and cheese together. Add buffalo wing sauce and shredded cheese, stirring to combine. Spread mixture into an ungreased shallow baking dish. Top with additional shredded cheese if desired. Bake, uncovered, 20-25 minutes or until cheese is melted. Top with optional blue cheese dressing and serve with bread, celery or tortilla chips for dipping.
 
Note: For the cheese, I grated a 8 ounce block of Colby Jack cheese
