Faux Food: Ms. Faux's Fried Chicken


Ms. Faux's Fried Chicken

So Ms. Faux's good friend Mr. Rudy is coming over tomorrow so I can introduce him to the wonder that is the Real Housewives of Atlanta.  I love them.  Werk Ms. NeNe and Ms. Phaedra.


So this has gotten Ms. Faux back in touch with her Southern roots so she is making a dinner of fried chicken, mashed potatoes, fried okra and greens.  All of her favorite soul foods.  I do think Ms. NeNe would aprove.


Now I know you are all thinking, Ms. Faux aren't you a vegetarian?  I am for the last 22 years, however before I became a vegetarian this is one of the very few meat products that I would eat when I did eat meat.  Let's just say Ms. Faux's granny could serve some fried chicken worthy of making a budding non-meat eater to eat an entire chicken.

Ingredients
  • 3/4 cup of sour cream
  • 1/2 cup milk
  • 8 boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 cup bread crumbs
  • 2 tbsp parsley
  • 1/2 cup potato chips, crushed fine
  • 1 Cup vegetable oil for frying
  • Salt & Pepper, to taste
(Optional: Skip the bread crumbs and potato chips and use instead flour and corn meal respectively for another consistency)

Instructions

  1. Preheat oven to 375F
  2. Pound chicken thin.
  3. In a large bowl, combine the sour cream, milk and garlic powder. 
  4. Place the chicken in the bowl, and cover.  Marinate in the refrigerator for at least one hour.
  5. In a medium mixing bowl, combine bread crumbs, parsley, and crushed potato chips.
  6. Remove chicken from sour cream marinade and press firmly into the breading misture, completely coating the chicken.  Repeat this for each piece.
  7. Heat the vegetable oil in a frying pan over a medium heat until hot.
  8. Carefully place chicken into the oil and cook on each side until golden brown.  Remove from oil and place on a paper towel.
  9. Season lightly with salt and pepper.
  10. Finish cooking the chicken by placing it on a baking sheet in the oven for 8 to 10 minutes or until it reaches an internal temperature of 160 F.
